Ingredients
  

  • ½ cup extra virgin olive oil
  • 3 tbsp fresh lemon juice (or vinegar)
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp Dijon mustard
  • 1 small garlic clove, minced
  • ½ tbsp salt
  • ¼ tbsp black pepper

  • 1 Mixing bowl
  • 1 Whisk
  • 1 Measuring cups and spoons
  • 1 Small jar with lid (for storage)

Method
 

  1. Add lemon juice, Dijon mustard, minced garlic, salt, and black pepper to a mixing bowl.
  2. Slowly whisk in the olive oil while mixing to help emulsify the dressing.
  3. Stir in the fresh chopped dill.
  4. Taste the dressing and adjust the seasoning if needed.
  5. Transfer to a jar and shake well before serving.

Notes

  • Fresh dill provides the best flavor, but dried dill can be used (about 2 teaspoons).
  • If the dressing tastes too sharp, add a small amount of honey to balance the acidity.
  • Store in a sealed jar in the refrigerator for 5–7 days.
  • Shake well before serving because oil and acid naturally separate.
  • Let the dressing sit 10 minutes at room temperature if the olive oil thickens in the fridge.
