High-Protein Vegan Tofu Caesar Dressing

Ingredients
  

  • 12 oz (340g) silken tofu
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 2 cloves garlic
  • 1 tbsp capers (or 1 tablespoon tamari)
  • 1 tbsp olive oil (optional)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspon black pepper
  • 1–3 tbsp water (if needed for thinning)

Method
 

  1. Add the silken tofu, lemon juice, Dijon mustard, garlic, capers (or tamari), nutritional yeast, olive oil (if using), salt, and black pepper to a blender.
  2. Blend until completely smooth and creamy, scraping down the sides if necessary.
  3. Taste the dressing and adjust the seasoning by adding more salt, lemon juice, garlic, or nutritional yeast as desired
  4. If the dressing is too thick, blend in 1 tablespoon of water at a time until you reach your preferred consistency.
  5. Transfer the dressing to an airtight container and refrigerate for 20–30 minutes before serving. It will become thicker and the flavors will develop as it chills.

Notes

  • Silken tofu creates the smoothest and creamiest texture.
  • For a stronger Caesar flavor, add extra garlic, capers, or nutritional yeast.
  • For extra tanginess, squeeze in more fresh lemon juice.
  • Add ½ teaspoon maple syrup if you prefer a slightly sweeter dressing.
  • Oil can be omitted for a lighter, oil-free version.
  • Always stir before serving if the dressing has been refrigerated.

Storage

  • Store in an airtight container in the refrigerator.
  • Best enjoyed within 4–5 days.
  • Stir well before each use.
  • Freezing is not recommended because the texture may become grainy after thawing.
