  • cup apple cider vinegar
  • ½ cup olive oil
  • 2 tbsp honey or maple syrup (vegan option)
  • 1 tbsp Dijon mustard
  • ½ tbsp salt
  • ¼ tbsp black pepper

Method
 

  1. Add chopped sweet onion to a blender.
  2. Blend until smooth to create a creamy base.
  3. Add apple cider vinegar and honey (or maple syrup).
  4. Blend again until fully combined.
  5. Taste to check the sweet–tangy balance.
  6. With the blender running on low speed, slowly pour in the olive oil.
  7. This creates a smooth, creamy emulsion that prevents separation.
  8. Add salt, pepper, and Dijon mustard.
  9. Blend briefly to combine.
  10. Transfer to a jar and refrigerate for at least 30 minutes.
