Ingredients
  

  • ½ cup tahini (well stirred)
  • ½ cup fresh orange juice
  • 1 tbsp orange zest
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • small garlic clove, minced
  • 2–4 tbsp warm water
  • ¼ teaspoon salt

Method
 

  1. Add tahini, orange juice, maple syrup, apple cider vinegar, minced garlic, and salt to a mixing bowl.
  2. Whisk thoroughly. The mixture may become very thick at first — this is normal.
  3. Slowly add warm water, one tablespoon at a time.
  4. Continue whisking until the dressing becomes smooth and creamy.
  5. Taste and adjust sweetness or salt as needed.
  6. The final texture should be thick but pourable.

  • Tahini often thickens when mixed with citrus — keep whisking.
  • Always add water gradually to control consistency.
  • Use smooth, high-quality tahini for best results.
  • If too thick, add more warm water.
  • If bitter, add extra maple syrup or orange juice.
