Ingredients
  

  • 1 cup dry orzo
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • ½ onion (chopped)
  • Salt and black pepper to taste
  • 1 cup spinach or kale
  • ½ cup mushrooms
  • ½ cup cherry tomatoes
  • ½ zucchini (chopped)

Method
 

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and garlic. Cook 2 minutes until fragrant.
  3. Stir in dry orzo and toast lightly for 1 minute.
  4. Pour in vegetable broth and bring to simmer.
  5. Cook 8–10 minutes, stirring often, until tender.
  6. Add vegetables and cook until soft.
  7. Season with salt, pepper, and lemon juice.
  8. Stir in optional protein or nutritional yeast and serve warm.
