  • 3 medium zucchini, sliced into rounds or half-moons
  • 2 tbsp extra virgin olive oil
  • cloves garlic, minced
  • 1 tbsp dried oregano
  • Salt and black pepper to taste
  • 1 tbsp fresh lemon juice

Method
 

  1. Heat olive oil in a large skillet over medium-high heat until shimmering.

  4. Turn the zucchini and cook another 3–4 minutes until tender but still firm.

  6. Remove from heat and drizzle fresh lemon juice over the zucchini for brightness.
